Homemade Oatmeal Cream Pies Recipe

Homemade oatmeal cream pies filled with a marshmallow filling are the perfect after school snack.


For the Cookies
1/2 cup butter
1/2 cup shortening
3/4 cup brown sugar
1/2 cup sugar
1 Tablespoon molasses
1 teaspoon vanilla
2 eggs
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 1/2 cup quick oats

For the Filling
1 Tablespoon hot water
1/4 teaspoon salt
1 - 7 ounce jar marshmallow creme
1/2 cup shortening
2/3 cup powdered sugar
1 teaspoon vanilla


  1. Cream butter, shortening, sugars, molasses, vanilla, and eggs. Combine flour, salt, soda, and cinnamon. Add to creamed mixture. Mix well. Mix in oats and drop by teaspoon on baking sheets. Bake at 350 degrees for 10-12 minutes. Let cool for a few minutes on the pan, then remove to a wire rack to cool completely.
