The Best Oatmeal Raisin Cookies Recipe

This recipe calls for double the amount of brown sugar than white sugar. Brown sugar is white sugar mixed with molasses and it’s moist. The moisture from the brown sugar will produce a softer cookie.

The Best Oatmeal Raisin Cookies are super simple, soft baked oatmeal cookies loaded with raisins. These cookies are ready in less than 20 minutes!

Yields 40 cookies


1/2 cup unsalted butter softened
1/2 cup vegetable shortening softened
1 cup light brown sugar packed
1/2 cup granulated sugar
2 large eggs room temperature
1 tablespoon light corn syrup
1 teaspoon vanilla extract
1 and 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups quick cooking oats
1 cup raisins


  1. Preheat the oven to 375ºF. Line a baking sheet with a silicone mat or parchment paper. Set aside.
  2. In a large mixing bowl, beat together the butter and shortening with an electric mixer until well blended. Add the sugars, beat until fluffy. Add the eggs one at a time, beat well after each addition. Beat in the corn syrup and vanilla.
