Easy Butternut Squash Soup Recipe

This delicious easy Butternut Squash Soup recipe is perfect for your fall, winter or holiday dinner menu! It’s smooth and rich, with gourmet taste, yet simple to make, with only 6 ingredients!

3 large butternut squash
2 tablespoons olive oil, divided
1 large onion, coarsely diced
1 quart chicken stock
2 ounces of cream cheese
salt and pepper to taste


  1. Preheat oven to 350 degrees.
  2. Carefully split the squash in half lengthwise. Scoop out the seeds. Season the cut side of the squash with salt and pepper and drizzle with 1 tablespoon of olive oil. Set cut side down on baking sheet and place in oven for 15 minutes or until squash is tender. When cool, scoop out the center using a small spoon.
